Basil Pesto


Basil Pesto
2 cups packed basil
1/2 cup parmesan cheese
1/3 cup pine nuts
2 cloves garlic, minced
1/2 cup oil

Process first 4 ingredients in a blender to a rough paste. With the machine running, slowly pour the olive oil through the feed tube. Add a little more oil if sauce seems too dry (it should be a thick paste). Add salt and pepper to taste.


NOTES: Pine nuts are kind of expensive, but you can find small packages in the baking aisle at your local grocery store that are pretty affordable. You can also freeze pesto.
